It’s easy to make Vegan Coleslaw

Ingredients:

8 oz (225g) white cabbage, finely shredded
8 oz (225g) carrots, grated
41⁄2 oz (130g) vegan mayonnaise, e.g. Plamil
Mustard and lemon juice, optional

Mix all ingredients together. If desired add a little mustard and lemon juice for extra flavour. Serves 4-5.
